Cheesecake decorated with red and yellow plum dessert sauce and fresh plums

Used in this delicious dessert sauce, plums make even ordinary vanilla ice cream a real treat. And they elevate the humble cheesecake to a celestial place.

Plum Dessert Sauce

1 Cup water
6 Medium size yellow or red plums, peeled, halved and stoned
3/4 cup sugar
2 Tablespoons fresh lemon juice
1 Tablespoon cornstarch
1/2 teaspoon vanilla extract

Place water, plums and sugar in a large, heavy saucepan, over high heat. Bring to a boil, then reduce the heat and simmer for 15 minutes. Allow the mixture to cool slightly, then transfer it to a blender and puree. Return to the saucepan, dissolve cornstarch in the lemon juice and add to the sauce while stirring. Simmer for 10 minutes. Let sauce completely cool before beating in the vanilla. Serve at room temperature.

Pastel de queso decorado con salsa dulce de ciruela amarilla y roja y ciruelas frescas

Utilizadas en esta deliciosa salsa dulce, las ciruelas hacen que incluso un ordinario helado de vainilla sea un verdadero placer. Y elevan a un humilde pastel de queso a un lugar celestial.

Salsa Dulce de Ciruela

1 taza de agua
6 ciruelas amarillas o rojas de tamaño mediano, peladas, partidas en mitad y removidas las semillas
3/4 taza de azúcar
2 cucharadas de jugo de limón fresco
1 cucharada de maicena
1/2 cucharadita de extracto de vainilla

Colocar el agua, las ciruelas y el azúcar en una cacerola grande y de fondo pesado, a fuego alto. Llevar a ebullición, reducir el fuego y cocinar a fuego lento durante 15 minutos. Dejar que la mezcla se enfríe un poco, luego transferirla a una licuadora y licuar hasta conseguir un puré suave. Regresar a la cacerola, disolver la maicena en el jugo de limón y agregar a la salsa revolviendo con una cuchara. Cocinar a fuego lento durante 10 minutos. Dejar que la salsa se enfríe completamente antes de agregar la vainilla. Servir a temperatura ambiente.
