Not Exactly The Same / No Exactamente Lo Mismo

A few days ago my blogger friend, Nora from ¿Gusta Usted?, posted a recipe for Chiles Cuaresmeños Rellenos de Queso. This is not the common chile relleno dish which is usually prepared with poblano peppers, this one is prepared with jalapeño peppers. The procedures are almost the same as with the poblanos; filled with cheese and covered in a eggy batter. However, these take the extra step of rapidly being cooked in boiling water and, beware, they are very spicy! 

I don't know about you but, every time I make chiles rellenos, I end up with extra egg batter and, even though I add some to my caldillo (a tomato broth I make for my chiles), I unhappily have to throw some away. Not any more! Nora also gave us a tip on what to do with the extra egg. She made a torta de ejotes, a green bean frittata if you will. 

I read her post in the morning, with an empty stomach. The chiles rellenos sounded and looked very appetizing for dinner so I decided to prepare some for us.  However, when going over my ingredients, I found out I had some chiles, cheese and green beans. Not exactly the same as Nora's but my recipe was inspired by hers.

Sweet Rellenos with Green Beans

12 sweet baby bell peppers
1 lb. green beans, cleaned and cut in half
6 cups water
salt to taste

for the filling:

1-2 Tablespoon olive oil
1/2 lb.  mushrooms (any kind you like), finely chopped
1 leek, halved and finely sliced (a small sweet onion would work well)
1 garlic glove, minced
Salt and pepper to taste
Queso Fresco (if queso fresco is not available use a mild feta)
1-2 cup grape tomatoes (or cherry tomatoes, quartered)
Extra virgin olive oil to finish the dish


On a dry cast iron griddle, over high heat, roast the peppers for about 3 minutes on each side. Peppers should have some black spots in places but should still be firm. 



Meanwhile, prepare the filling; in a skillet, heat the oil and saute leeks, garlic and mushrooms for about 10 minutes. Season with salt and pepper to taste. Remove from heat and let cool. When cold, add crumbled cheese and stir to combine.

In a deep pot, bring water to a rapid boil, add salt and cook green beans to desired  tenderness, I like mine with some crunch so I only cook them for 3 to 5 minutes. When cooked, remove beans from the hot water and place them in a bowl filled with ice water so the cooking stops and beans maintain their green color. When cool, drain and set aside.

Add chiles to the same water you cooked the beans in and cook for only 1 minute or 2. Remove from hot water and place in a cold bath as the beans. At this point the peppers should be a little soft but not overcooked. Drain, remove the black skin, cut a slit along each pepper until all are done. These peppers don't have many seeds so don't bother to take out the very few seeds in them.


To assemble the dish, fill peppers with mushroom mixture. Place on a dish alternating pepper and green beans. decorate with grape tomatoes and sprinkle with extra virgin olive oil. 

This is a very satisfying vegetarian dish that can be eaten cold or at room temperature. If you like, it can be served to accompany grilled fish or chicken. Like I said, not the same as Nora's but her recipe inspired this delicious chiles rellenos.

Hace unos días mi amiga bloggera, Nora de ¿Gusta usted?, publico una receta de Chiles Cuaresmeños Rellenos de Queso. Este no es el platillo de chiles rellenos común que generalmente se prepara con chiles poblanos, éste se prepara con chiles jalapeños o cuaresmeños. Los procedimientos son casi los mismos que con chiles poblanos; rellenos de queso y capeados con huevo. Sin embargo, éstos llevan el paso extra de cocinarlos rápidamente en agua hirviendo y, ¡cuidado, que son muy picantes!

Yo no sé ustedes pero, cada vez que hago chiles rellenos, termino con huevo batido extra y, a pesar de que añado un poco a mi caldillo (un caldo de tomate que hago para mis chiles), por desgracia tengo que tirar el restante. ¡No más! Nora también nos dio un consejo sobre qué hacer con el huevo extra. Ella hizo una torta de ejotes, una frittata.

He leído su post por la mañana, con el estómago vacío. Los chiles rellenos sonaba y se veía muy apetecible para la cena, así que decidí preparar unos para nosotros. Sin embargo, cuando estaba revisando mis ingredientes, me di cuenta que tenia algunos chiles, queso y ejotes. No es exactamente lo mismo que hizo Nora, pero mi receta fue inspirada por la de ella.

Rellenos Dulces con Ejotes

12 chiles morón dulces (baby)
1 libra de ejotes, limpios y cortados a la mitad
6 tazas de agua
sal al gusto

Para el relleno:

1-2 cucharadas de aceite de oliva
1/2 libra de champiñones (de cualquier tipo que desee), finamente picado
1 puerro, cortado en medias lunas, finas (se puede sustituir por una cebolla dulce)
1 diente de ajo, picado
Sal y pimienta al gusto
Queso Fresco (si el queso fresco no está disponible utilizar queso feta)
1-2 taza de tomatitos uva (o tomates cherry, en cuartos)
Aceite de oliva extra virgen para terminar el plato


En un comal en seco, a fuego alto, asar los chiles durante unos 3 minutos por cada lado. Los chiles pueden tener algunas manchas negras en lugares, pero debe estar firmes.


Mientras tanto, preparar el relleno, en una sartén, calentar el aceite y saltear los puerros, el ajo y los champiñones durante unos 10 minutos. Sazonar con sal y pimienta al gusto. Retirar del fuego y dejar enfriar. Cuando esté frío, agregar el queso desmenuzado y revolver para mezclar.

En una olla grande, poner el agua a hervir, cuando alcance una ebullición rápida, agregar sal y cocinar los ejotes a la ternura deseada, a mi me gustan crujientes, así que sólo los cocine durante 3 a 5 minutos. Cuando estén cocidos, retirarlos del agua caliente y colocarlos en un recipiente lleno de agua con hielo para interrumpir la cocción y que los ejotes mantengan su color verde. Cuando estén fríos, escurrir y reservar.

Añadir los chiles a la misma agua en que se cocinaron los ejotes y cocinar por sólo 1 minuto o 2. Retirar del agua caliente y colocar en un baño de agua fría, como los ejotes. En este punto, los chiles debe estar un poco blandos pero no recocidos. Escurrir, quitar la piel negra, hacer un corte a lo largo de cada chile hasta terminar con todos. Estos chiles no tienen muchas semillas por lo que no se molesten en sacar las muy pocas semillas que tengan.


Para servir, rellenar los chiles con la mezcla de champiñones. Colocar en un plato alternando chiles y ejotes. Decorar con tomates uva y rociar con aceite de oliva extra virgen.

Este es un plato vegetariano muy satisfactorio que se puede comer en frío o a temperatura ambiente. Si lo desean, se puede servir para acompañar pescados o pollo asado. Como dije, no son iguales que los de Nora, pero su receta ha inspirado estos deliciosos chiles rellenos.

que maravila de plato, con ese colorido! ojala yo tuviera esa variedad de chiles aqui, los poblanos solo los encuentro en julio/agosto y tengo que ir a portobello especialmente. Jalapenos, apenas encuentro, de los secos todos los que quieras. Besitos!

Pity, que gusto verte por aquí! Siento mucho que no tengas esta variedad de chile. También con los chiles secos se puede preparar chiles rellenos, salen muy ricos.
