Sorrow Tastes Better with Bread / Las Penas con Pan son Buenas




June has been one very difficult month for me and my family. We have suffered the surprising death of Ray, my beloved brother-in-law, and two weeks later the death of my beloved father-in-law, Meredith, who was a second father to me. And as if that wasn't enough, I almost lost my mother who suffered two heart attacks in one week and was hospitalized while we were on needles and pins.

There's a saying in Spanish that goes, "God squeezes but he doesn't suffocate." I believe it because my mother survived and is recovering at home and I can breathe easier, now. Another saying says, in translation, "Sorrow tastes better with bread." So for my brother- and father-in-law, we will remember them with love while sharing meals of the foods they loved to eat.


My brother-in-law loved Honey Nut Cheerios. He also loved refried beans and guacamole dip. In these last days and weeks I have cooked beans for the family and the other night Rich and I had Honey Nut Cheerios to remember Ray. We ate them from big bowls with milk, in the kitchen, standing up as he used to do. It was a homage to our dearest Ray in the last day that his body was in this world. He was cremated that morning. 


My father-in-law was an expert at preparing pancakes. I have a small recipe book that he wrote including several recipes of pancakes. Surely, Rich and I will enjoy them - while remembering him - for many years at our Sunday breakfasts. In his last months my father-in-law enjoyed desserts very much; sweet dishes were sometimes all he would eat. A few weeks ago Rich and I prepared a cake of crepes with ricotta cheese and a blueberry sauce that he would have loved. We didn't have time to share it with my father-in-law but I am sure that whenever I eat a dessert I will remember him with love.


Thank God my mother and mother-in-law are still with us. But because of her heart condition my mom's diet has to be more strict and she cannot eat too many sweets or foods high in fats or salt. So, I have prepared a very healthy recipe for her that is perfect on these warm summer days. I'm sharing the recipe here.

Tomatillo Salad with Mango and Orange


3 Large tomatillos, cleaned and thinly sliced
1 Mango, peeled and chopped
3 Small oranges, peeled and segmented
1 Tablespoon orange juice
1-2 Tablespoons avocado oil or olive oil
2 Tablespoon fresh mint, finely chopped
Salt and freshly ground black pepper to taste

Combine all ingredients in a salad bowl. Serve at room temperature.







Las Penas con Pan son Buenas

El mes de Junio ha sido un mes muy difícil para mi y mi familia. Hemos sufrido la sorprendente muerte de Ray, mi queridísimo cuñado, y dos semanas después la muerte de mi adorado suegro, Meredith, quien fue un segundo padre para mi. Y por si fuera poco, casi pierdo a mi madre quien sufrió dos ataques cardiacos en una semana y estuvo hospitalizada teniendonos con el alma en un hilo.

Dicen que "Dios aprieta pero no ahorca." Y ya lo creo porque mi madre sobrevivió y se esta recuperando en casa y yo puedo respirar con mas calma. También dicen que "las penas con pan son buenas."  Así que va por mi suegro y mi cuñado, a quienes recordaremos con amor mientras compartimos platillos de la comida que a ellos mas les gustaba.


A mi cuñado le encantaban los Honey Nut Cheerios. También le encantaban los frijoles refritos y el guacamole. En los últimos días y semanas he cocinado frijoles para la familia y la otra noche Rich y yo cenamos Honey Nut Cheerios para recordar a Ray. Los servimos en tazones grandes con leche y los comimos en la cocina, de pie como el solía hacerlo. Fue un homenaje a nuestro querido Ray en el ultimo día que su cuerpo estuvo en este mundo. Fue cremado esa mañana.


Mi suegro era experto en preparar pancakes. Tengo un pequeño recetario que él escribió con su puño y letra y el cual incluye varias recetas de pancakes. Seguramente Rich y yo las disfrutaremos - mientras lo recordamos - por muchos años en nuestros desayunos de los domingos. En los últimos meses mi suegro disfrutaba mucho de los postres; las comidas dulces eran muchas veces lo único que quería comer. Hace algunas semanas Rich y yo preparamos un pastel de crepes con requesón y una salsa de blueberry que a él le hubiera encantado. Ya no lo alcanzamos a compartir con mi suegro pero estoy segura que siempre que coma un postre lo recordare con cariño.


Gracias a Dios mi madre y mi suegra aun están con nosotros. Pero por sus problemas del corazón la dieta de mi madre tiene que ser mas estricta y no puede comer cosas tan dulces o altas en grasas ni sal. Así que le he preparado una receta muy saludable y perfecta para estos días calurosos de verano. Aquí comparto la receta.

Ensalada de Tomatillo con Mango y Naranja


3 tomatillos grandes, limpios y en rebanadas delgadas
1 Mango, pelado y en trozos
3 Naranjas pequeñas, peladas y en segmentos
1 Cucharada de jugo de naranja
1-2 Cucharadas de aceite de aguacate o aceite de oliva
2 Cucharadas de hierba buena o menta, finamente picada
Sal y pimienta negra recién molida, al gusto

Combinar todos los ingredientes en un recipiente para ensalada. Servir a temperatura ambiental.

La vida a veces nos pone a prueba. Lamento muchísimo la perdida de tu cuñado y tu suegro y me alegro de que tu madre esté ya mejor. Los problemas nos hacen ser más fuertes y verás como todo se soluciona tarde o temprano.

That sounds like a great recipe. I think that this was a wonderful tribute to your bil and fil and it was very gracious of you. How neat, eating cheerios standing up to pay tribute. Siento mucho la perdida de tus seres queridos Martha! Y deseo que tu mami pueda recuperárse pronto también. Es muy triste perder a personas tan queridas, decimelo a mí, que todavía sufro por la pérdida de mi querido padre.

Hola Prieta!
espero que dos años después hayáis superado la pérdida. Ya se que nunca se recupera una del todo, pero al menos con el tiempo cuando recuerdas lo haces con una sonrisa, pensando en las cosas buenas que te dejaron.

Respecto al tomatillo, nunca pensé que se pudiera comer crudo, en ensalada, tendremos que probarlo!
